Cheese of the Week – Harbison!

Harbison is the newest offering from the talented cheesemaking team at Jasper Hill. The cheese gets its name from Anne Harbison, held by many to be the grandmother of Greensboro. She’s active in the community, runs a bed and breakfast, works in the public library, and is delighted to be honored by having a cheese named after her.

Harbison is a bark-wrapped bloomy rind cheese that balances a sweet, nutty flavor alongside a complex herbal and woodsy note from the cambium cut from the spruce trees at Jasper Hill Farm. The paste is spoonable but not runny, and represents a marked flavor and textural contrast to the expertly developed rind. The variety of flavors here represents the quality of the milk alongside the unique expression of terroir from the bark.
